Join me for an incredible day at the Rabot Hotel by Hotel Chocolat in St Lucia. I admit, I didn't even know this place existed, but it's a dream for chocolate lovers! We start with a tour of the stunning Project Chocolat grounds and the historic Rabot Estate, established in 1745. I take you inside the 'Seederie' greenhouse where you can see cacao plants at every stage and even register your name to one. The service is next level—my guide literally climbed a tree to get me fresh coconut water! We wrap up with a walk through the rainforest trails before heading to the bar to kick off the chocolate-making class. If you're a foodie or love the brand, this is the ultimate Caribbean pilgrimage.

Hotel Chocolat in St Lucia. So if you live in the UK, you'll know the Hotel Chocolat brand and maybe it's in other places. I absolutely love it. I'm a bit embarrassed to say I didn't even know till I came to St Lucia that there actually was a hotel, a Hotel Chocolat, and a whole experience, etc. So today I'm going to be doing the bean to bar experience. I'm going to be making my own chocolate bar. We're going to do a tour of the hotel so I can share that with you. We're going to have some lunch and I'm definitely going to be buying some chocolate to take home. Let's go Hotel Chocolat. The grounds of Project Chocolat are absolutely stunning. Look at this place. The Rabot Estate, it was first established in the year 1745 by the French. No nibs, no chocolate. The cocoa nibs is the most important part in making chocolate. Then this is the Seederie filled with, you guessed it, seeds and little small early plants at different stages and you can register your name and you get your name on one plant. Okay so... has just literally cut this down from... he actually went shimmied up the tree like you wouldn't believe and he's cut this open so now I'm going to be drinking straight coconut water. Cheers. Oh, refreshing. Yep. Thanks. Next up was a visit to the rainforest. Oh hug me. Give a cuddle. We saw some beautiful plants including that's a cocoa bean ready to go. Bit more of the coconut water. Few more mottos and then we had to head up for where we were going to make the chocolate. But first a little drink.
